A Christmas time classic, these chocolate caramel pecan bites are hard to resist! The sweet and salty favours with a crunchy texture are a must try.
Makes 12 servings.
4 ounces of pecans, halved
An eighth of the loaf of caramel, shop here.
24 individually wrapped caramels, unwrapped
1 cup good quality milk chocolate chips or disks
Preheat oven to 300 degrees F.
Cover cookie sheet with parchment paper, shop here.
Lightly grease with vegetable oil spray.
Place 3 pecan halves in a Y shape on the tray.
Place a small cube of caramel candy in the center of each Y.
Bake just until caramel is melted, about 9 to 10 minutes.
Heat chocolate chips over low heat just until chocolate is melted on stove top. I prefer to use the microwave in a glass measuring cup, shop here.
Heat the chocolate in intervals, stirring each time. Chocolate burns easily.
Spread over candies and refrigerate for 30 minutes.
If you would like, drizzle melted chocolate (white, milk or dark) over the chocolate.
