Blueberry Upside Down Cake




Ingredients


Sauce

  • 1/4 cup melted butter

  • 1/2 cup brown sugar

  • 2 cups blueberries

  • 1 tablespoon lemon juice

Cake

  • 1/2 cup butter

  • 3/4 cup sugar

  • 1 egg

  • 1 teaspoon vanilla

  • 1 1/2 cups flour

  • 2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon cinnamon (optional)

  • 3/4 cup milk

Instructions


1. In a 9 inch square pan, combine melted butter and brown sugar. Spread evenly on bottom of pan and spread blueberries evenly overtop. Sprinkle with lemon juice.



2. Cream butter, gradually add sugar, beating until light. Be in egg and vanilla.


3. In a separate bowl, mix flour, baking powder and salt.


4. Add dry ingredients alternating with milk to cream mixture. Spread over blueberries.


5. Bake at 350 degrees F for 45 to 60 minutes and let cool for 10 minutes.
